- In a bowl, combine yogurt, lemon juice, ginger-garlic paste, spices, and salt.
- Add shrimp and coat well. Cover and marinate for at least 30 minutes (or up to 4 hours in the fridge).
- Bring a pot of salted water to a boil. Cook spaghetti until al dente.
- Reserve ½ cup of pasta water, then drain the spaghetti.
- 3. Cook the Tandoori Shrimp
- Heat a grill pan or skillet over medium-high heat. Add 1 tbsp oil.
- Grill or sear shrimp 2–3 minutes per side until charred and cooked through. Set aside.
- In the same skillet, reduce heat to medium. Add butter and a splash of olive oil.
- Sauté red onion until soft. Add garlic and cook until fragrant.
- Stir in tomatoes and cook until they break down and become jammy.
- Add chili flakes (if using), season with salt and pepper, and pour in reserved pasta water.
- Toss spaghetti in the sauce until coated and heated through.
- Add grilled shrimp on top or stir in.
- Garnish with chopped cilantro and a squeeze of lemon.
