Ingredients

For the Spaetzle (or use store-bought):

Instructions

  1. Make the Spaetzle (if homemade)
  2. In a bowl, whisk together flour, eggs, milk, salt, and nutmeg into a smooth, sticky batter.
  3. Bring a large pot of salted water to a simmer.
  4. Push batter through a spaetzle maker or colander into the simmering water.
  5. Cook until spaetzle floats (2–3 minutes), then scoop out and rinse in cold water.
  6. Toss with a bit of butter and set aside.
  7. Heat a large skillet over medium heat with oil or butter.
  8. Add bratwurst slices and brown them on all sides until cooked through.
  9. Remove and set aside.
  10. In the same pan, add sliced onions and cook on medium-low until deeply caramelized (10–12 minutes).
  11. Deglaze with broth or beer, scraping up browned bits.
  12. Stir in both mustards and reduce slightly.
  13. Add cream or sour cream and stir to combine.
  14. Return bratwurst to the pan and simmer for a few minutes. Adjust seasoning.
  15. Add cooked spaetzle to the pan and toss to coat in the mustardy sausage-onion sauce.
  16. Heat through until everything is warm and cohesive.
