- Make the Spaetzle (if homemade)
- In a bowl, whisk together flour, eggs, milk, salt, and nutmeg into a smooth, sticky batter.
- Bring a large pot of salted water to a simmer.
- Push batter through a spaetzle maker or colander into the simmering water.
- Cook until spaetzle floats (2–3 minutes), then scoop out and rinse in cold water.
- Toss with a bit of butter and set aside.
- Heat a large skillet over medium heat with oil or butter.
- Add bratwurst slices and brown them on all sides until cooked through.
- Remove and set aside.
- In the same pan, add sliced onions and cook on medium-low until deeply caramelized (10–12 minutes).
- Deglaze with broth or beer, scraping up browned bits.
- Stir in both mustards and reduce slightly.
- Add cream or sour cream and stir to combine.
- Return bratwurst to the pan and simmer for a few minutes. Adjust seasoning.
- Add cooked spaetzle to the pan and toss to coat in the mustardy sausage-onion sauce.
- Heat through until everything is warm and cohesive.
