  1. Prep the Chicken: If using leftover or pre-cooked chicken, warm it in a pan with buffalo sauce until well-coated and slightly reduced. Set aside.
  2. Scramble the Eggs: In a large skillet or wok over medium-high heat, add a splash of oil. Pour in the beaten eggs and scramble until just set. Remove and reserve.
  3. Sauté Vegetables: Add more oil if needed. Stir-fry garlic, celery, carrot, and the white parts of the scallions for 2–3 minutes, until slightly softened but still crisp.
  4. Fry the Rice: Add chilled rice to the pan. Break up clumps and fry for 3–4 minutes until slightly crispy. Add the scrambled eggs back in.
  5. Combine with Chicken: Toss in the buffalo chicken and stir to mix thoroughly. Cook for another 2 minutes, letting the rice absorb the sauce.
  6. Season and Finish: Taste and season with salt and pepper. Add green scallion tops and remove from heat.
