Instructions
- Prep the Chicken: If using leftover or pre-cooked chicken, warm it in a pan with buffalo sauce until well-coated and slightly reduced. Set aside.
- Scramble the Eggs: In a large skillet or wok over medium-high heat, add a splash of oil. Pour in the beaten eggs and scramble until just set. Remove and reserve.
- Sauté Vegetables: Add more oil if needed. Stir-fry garlic, celery, carrot, and the white parts of the scallions for 2–3 minutes, until slightly softened but still crisp.
- Fry the Rice: Add chilled rice to the pan. Break up clumps and fry for 3–4 minutes until slightly crispy. Add the scrambled eggs back in.
- Combine with Chicken: Toss in the buffalo chicken and stir to mix thoroughly. Cook for another 2 minutes, letting the rice absorb the sauce.
- Season and Finish: Taste and season with salt and pepper. Add green scallion tops and remove from heat.
Buffalo Chicken Stir-Fried Rice
Stir-fried rice is a beloved staple in American Chinese takeout. Growing up, we would always order it loaded with chicken, shrimp, and beef—it was one of our absolute favorites.
In this version, we’ve put a bold twist on the classic by infusing it with the flavors of Buffalo chicken. We’ve added tender buffalo-style chicken, crisp celery, and tangy blue cheese to give the dish a distinctly American flair. The combination is spicy, savory, and just the right amount of indulgent.
This Buffalo Chicken Stir-Fried Rice is a must-try in your kitchen—perfect for busy weeknights, casual dinners, or anytime you’re craving comfort food with a bit of a kick.
