- In a bowl, mix soy sauce, brown sugar, sesame oil, vinegar/mirin, garlic, ginger, black pepper, green onions, and gochujang.
- Add ground beef and mix well. Let marinate for 15–30 minutes (or up to overnight in the fridge).
- Boil spaghetti in salted water until al dente. Drain and reserve 1/4 cup pasta water.
- In a large skillet or sauté pan, heat olive oil over medium heat.
- Add diced onion and sauté until translucent (5 minutes).
- Stir in minced garlic and cook for 30 seconds.
- Add the marinated beef and cook until browned and cooked through, breaking it up as it cooks (6–8 minutes).
- Stir in tomato paste and crushed tomatoes. Add red pepper flakes and oregano.
- Simmer the sauce for 10–15 minutes, stirring occasionally. Add reserved pasta water as needed to adjust consistency.
- Season with salt and pepper to taste.
- Add cooked spaghetti to the sauce and toss until well coated.
- Serve hot, topped with chopped scallions, fresh basil, and sesame seeds if desired.
