Ingredients

Instructions

  1. In a bowl, mix soy sauce, brown sugar, sesame oil, vinegar/mirin, garlic, ginger, black pepper, green onions, and gochujang.
  2. Add ground beef and mix well. Let marinate for 15–30 minutes (or up to overnight in the fridge).
  3. Boil spaghetti in salted water until al dente. Drain and reserve 1/4 cup pasta water.
  4. In a large skillet or sauté pan, heat olive oil over medium heat.
  5. Add diced onion and sauté until translucent (5 minutes).
  6. Stir in minced garlic and cook for 30 seconds.
  7. Add the marinated beef and cook until browned and cooked through, breaking it up as it cooks (6–8 minutes).
  8. Stir in tomato paste and crushed tomatoes. Add red pepper flakes and oregano.
  9. Simmer the sauce for 10–15 minutes, stirring occasionally. Add reserved pasta water as needed to adjust consistency.
  10. Season with salt and pepper to taste.
  11. Add cooked spaghetti to the sauce and toss until well coated.
  12. Serve hot, topped with chopped scallions, fresh basil, and sesame seeds if desired.
