- In a large pot, heat oil over medium heat.
- Add green curry paste and sauté for 1–2 minutes until fragrant.
- Stir in the coconut milk and bring to a simmer.
- Add broth, fish sauce, sugar, lime juice, lemongrass, and kaffir lime leaves. Simmer for 10–15 minutes.
- Strain out lemongrass and lime leaves if using, or leave them in for aroma (but remove before eating).
- Add mushrooms, broccoli, bell pepper, and snap peas to the broth. Simmer 5 minutes.
- Add your protein:
- Chicken: Simmer until cooked through (5–7 minutes).
- Shrimp: Simmer until pink and just cooked (2–3 minutes).
- Tofu: Add last to prevent crumbling.
- Cook ramen noodles separately according to package directions.
- Drain and portion into serving bowls.
- Ladle hot green curry broth and toppings over noodles.
- Garnish with fresh herbs, bean sprouts, chili, egg (if using), and a squeeze of lime.
