Creamy coconut green curry broth with springy noodles, veggies, and your choice of protein—warming, spicy, and deeply comforting.

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add green curry paste and sauté for 1–2 minutes until fragrant.
  3. Stir in the coconut milk and bring to a simmer.
  4. Add broth, fish sauce, sugar, lime juice, lemongrass, and kaffir lime leaves. Simmer for 10–15 minutes.
  5. Strain out lemongrass and lime leaves if using, or leave them in for aroma (but remove before eating).
  6. Add mushrooms, broccoli, bell pepper, and snap peas to the broth. Simmer 5 minutes.
  7. Add your protein:
  8. Chicken: Simmer until cooked through (5–7 minutes).
  9. Shrimp: Simmer until pink and just cooked (2–3 minutes).
  10. Tofu: Add last to prevent crumbling.
  11. Cook ramen noodles separately according to package directions.
  12. Drain and portion into serving bowls.
  13. Ladle hot green curry broth and toppings over noodles.
  14. Garnish with fresh herbs, bean sprouts, chili, egg (if using), and a squeeze of lime.
