  3. Add chopped onion and garlic to the pot. Cook until soft and golden.
  4. Stir in tomato paste and diced tomatoes. Let it simmer until the tomatoes break down and the mixture thickens.
  5. Mix in all spices: turmeric, paprika, cinnamon (if using), black pepper, salt, and hararat.
  6. Add the bay leaf and chili pepper.
  7. Stir everything well until fragrant.
  8. Pour in water or broth, enough to cover the meat.
  9. Cover and simmer for 45 minutes, or until the meat is mostly cooked and tender.
  10. If using, add potatoes and carrots halfway through the simmer.
  11. Add pasta directly to the broth mixture. Stir well to avoid sticking.
  12. Let the pasta cook uncovered, stirring occasionally, until al dente and the liquid is mostly absorbed (10–15 minutes depending on pasta type).
  13. Adjust salt and pepper to taste. Add a splash more water if needed for consistency.
  14. Remove from heat. Let sit for 5 minutes for flavors to meld.
  15. Garnish with chopped parsley or cilantro.
  16. Serve with lemon wedges on the side.
