  1. In a large bowl, toss the chicken pieces with salt, pepper, rice wine, and grated ginger. Let it marinate for at least 30 minutes, or cover and refrigerate for up to 4 hours.
  2. After marinating, pat the chicken dry slightly. Dredge each piece in potato starch until well-coated. Shake off any excess.
  3. First Fry: Heat oil in a deep fryer or large pot to 330°F. Fry chicken in batches for 5–7 minutes until pale golden. Remove and rest on a wire rack.
  4. Second Fry: Increase oil temperature to 375°F. Fry chicken again for 2–3 minutes until deeply golden brown and extra crispy.
  5. In a small pan over medium heat, add oil, garlic, and ginger. Sauté for 30 seconds. Add gochujang, ketchup, soy sauce, rice syrup, brown sugar, and vinegar. Stir and simmer for 2–3 minutes until thick and glossy.
  6. Place the double-fried chicken into a large mixing bowl. Pour the hot sauce over and toss until evenly coated.
  7. Sprinkle with toasted sesame seeds and green onions. Serve immediately with pickled radish and cold beer for a true Korean fried chicken experience.
