Here’s a traditional Filipino Picadillo recipe, also known locally as Giniling na Baboy o Baka (ground pork or beef stew). This hearty and flavorful dish is easy to make and commonly served with rice. It has two popular variations in the Philippines—soupy and dry. This recipe focuses on the dry, sautéed version, perfect for everyday meals.

  1. Heat oil in a pan over medium heat.
  2. Sauté garlic until golden, then add onions. Cook until translucent.
  3. Add tomatoes and cook until soft and saucy.
  4. Add ground beef or pork. Stir and break it up.
  5. Cook until the meat is browned and juices have mostly evaporated.
  6. Stir in soy sauce, fish sauce, sugar, pepper, and bay leaf.
  7. Let it simmer for 2–3 minutes to absorb flavor.
  8. Add diced potatoes and carrots. Mix well.
  9. Pour in water or broth. Cover and simmer for 10–12 minutes, or until vegetables are tender.
  10. Add raisins and green peas. Simmer uncovered for another 3–5 minutes.
  11. Taste and adjust seasoning with salt or more fish sauce if needed.
  12. Serve hot over steamed white rice.
